The French pâtisserie is one of the great applied arts of the 19th century, and Carême’s illustrated publications are among the most extraordinary objects produced by a chef at any period: volumes of engraved plates documenting confections that no longer exist, rendered with the precision of botanical illustration and the ambition of architectural drawing. A napkin printed with a numbered dessert vignette carries something of that seriousness to the table — which is, I think, exactly right for a dessert course that deserves to be taken seriously.
